Disguise Your Veggies

If you hate vegetables and find them hard to stomach because you have nightmares of your childhood, when your parents would force you to finish your vegetables before leaving the dinner table..Then you’re going to want to continue reading..

Every time I meet with clients to discuss their meal plans, I always see them cringe as I say, “load up on the veggies…”.

I am not sure if it is because you are scarred from all of the peas you were forced to eat, or if you just haven’t figured out a way to prepare vegetables that satisfies your taste buds.

Whatever the case may be, there are numerous ways to disguise your vegetables and make a dish that is actually delicious!

Cauliflower is one of the vegetables that can be easily disguised and used in various ways such as: pizza crust, bread sticks, “rice”, “mashed potatoes”, among others.

Today I am going to share two of my favorite ways to prepare cauliflower, as “rice’ and “mashed potatoes”. I actually make these faux mashed potatoes on Thanksgiving and skip the heaping pile of the traditional kind. These feel less “heavy” and leave more room for pie 😉

Both of these preparations are super easy and delicious!

Cauliflower Rice:

Ingredients:

1 Head of Cauliflower

½ Tbs. Oil (coconut is my favorite, olive oil works, as well)

Seasonings , to taste (salt, pepper, garlic)

Instructions:

1. Wash and trim the cauliflower (discarding the leaves). Chop it into small pieces and place into a food processor. Pulse the florets until they are finely shredded.

2. Heat your oil in a large skillet. Add the finely chopped cauliflower to the skillet, and saute for 5-10 minutes.

3. Season to taste, with spices of your choice. For traditional rice, salt and pepper work great!

4. Serve as a low – carb substitute for traditional rice! ENJOY!

Cauliflower “Mashed Potatoes”

Ingredients:

1 Large Head of Cauliflower

1-3 Cloves of Peeled Garlic (your preference)

Seasonings to taste (salt / pepper)

Instructions:

This is very simple, all you have to do is:

Bring a large pot of water to a boil

While waiting on the water, remove the leaves from your cauliflower and chop it into small pieces

Place your cauliflower florets and peeled garlic into the pot of boiling water (you may use a steaming basket, as well)

Cover the pot and allow the cauliflower to cook for about 10 minutes. It should be very soft – you will not over cook it.

Drain the water and add the cauliflower / garlic to a food processor or a blender.

Add your seasonings and blend the softened cauliflower until it is a smooth consistency.

I personally love all vegetables, but if you struggle to eat them like many people do, these are great preparations to try!
